Pineapple Chicken Curry + Pineapple Curry Fried Rice

Cook once. Eat twice.

Jump to Recipe

This pineapple curry fried rice isn’t a shortcut — it’s a method.

Day one, you make a deeply flavored pineapple curry and serve it simply with rice.

Day two, that same curry becomes fried rice: chewy grains, concentrated flavor, new textures.

No extra prep. No separate meal.

Just cooking with intention.

This is how I plan meals, reduce waste, and still eat food that feels thoughtful and satisfying every time.

If you cook for yourself, your family, or your future self — save this.

Ingredients & Method

Day One: Pineapple Chicken Curry

  • 3-4 lb chicken thighs & breasts, skin removed
  • Salt & black pepper
  • Avocado or olive oil
  • 1 large onion, diced
  • 2–3 tbsp fresh ginger, grated
  • 4 cloves garlic, minced
  • 1–2 serrano chiles, minced (to taste)
  • 2 tbsp curry powder
  • 1 tbsp garam masala
  • 1 tbsp ground coriander
  • 1 tbsp turmeric
  • 1 small can pineapple juice (about 6 oz)
  • 4 cups chicken broth
  • 2 bay leaves
  1. Season chicken generously with salt and pepper. Brown in oil until golden on both sides (do not cook through). Remove and set aside.
  2. Add onions to the same pot and sauté until softened. Add ginger, garlic, and serranos; cook until fragrant.
  3. Add curry powder, garam masala, coriander, and turmeric. Let bloom briefly, then taste and adjust salt.
  4. Deglaze with pineapple juice, scraping up the fond.
  5. Return chicken to the pot with broth and bay leaves. Simmer gently until chicken is tender and the sauce reduces to a light gravy.
  6. Serve the over rice or reserve for Day Two.

Day Two: Pineapple Curry Fried Rice

  • Leftover pineapple chicken curry (chicken chopped or shredded, gravy reserved)
  • Cold, day-old cooked rice
  • Neutral oil
  • 1 small onion, diced
  • 2–3 eggs, beaten
  • Pineapple chunks
  • Cashews
  • Raisins
  • Salt, to taste
  • Optional for serving: soft-boiled eggs, citrus wedges, fresh herbs
  1. Heat oil in a large wok or skillet over medium-high heat.
  2. Sauté onions until softened.
  3. Add chicken and warm through.
  4. Push everything to one side and add the beaten eggs; scramble directly in the wok.
  5. Stir eggs into the chicken and onions, then add some of the curry gravy to coat everything.
  6. Add the cold rice and toss over high heat until hot and evenly coated.
  7. Fold in pineapple chunks, cashews, and raisins.
  8. Taste and adjust with salt as needed. Serve hot.

Good to know

This dual-purpose dish transforms a flavorful, spice-rich pineapple chicken curry into a vibrant fried rice for a second meal. Simply simmer the chicken in a seasoned pineapple and broth gravy, then toss leftovers with cold rice, eggs, cashews, and raisins.

Substitutions

Storage & reheating

Store leftover curry or fried rice in an airtight container in the refrigerator for general food safety. Reheat thoroughly in a skillet over medium heat or in the microwave until hot before serving.

Common questions

Why should cold, day-old rice be used for the curry fried rice?

Cold, day-old rice has less moisture, allowing it to absorb the curry gravy and toss easily over high heat without becoming mushy.

How is the sauce deglazed during cooking?

After blooming the ground spices in the pot with the aromatics, pour in a small can of pineapple juice and scrape up the fond from the bottom of the pan.

What optional toppings can be added to the final dish?

The finished meal can be served with soft-boiled eggs, citrus wedges, and fresh herbs.
