White chocolate + 1 tsp coconut oil (optional drizzle)
Whisk maple syrup + tahini until smooth.
Add everything except the flours, one ingredient at a time, mixing after each addition.
Mix in the almond flour.
Add 1 cup of oat flour and switch to a heavy-duty spatula or wooden spoon.
Mix until combined, then add more oat flour until the dough is no longer sticky.
Turn dough out onto a floured surface and knead 1–2 minutes until you can shape it into a log.
Cut into even pieces (I use the halving method) and roll into 1.5–2 tbsp balls.
Gently flatten the tops and bake at 350°F for ~15 minutes, until lightly crispy and golden on the bottom.
Melt white chocolate (use dairy-free if needed!) and drizzle with a spoon. Add coconut oil if it needs to thin out.

Good to know
Warmly spiced with masala chai spices and tahini, these gluten-free cookies are crispy on the outside with a dense, chewy center. Baked at 350°F until golden on the bottom, they can be finished with an optional white chocolate drizzle.
Substitutions
Use dairy-free white chocolate instead of regular white chocolate if needed.
Swap vanilla bean paste with an equal amount of vanilla extract.
Replace tahini with another seed or nut butter, such as sunflower seed butter or almond butter.
Omit the coconut oil if the melted white chocolate is already thin enough for drizzling.
Storage & reheating
Store the cookies in an airtight container at room temperature or in the refrigerator. For long-term storage, keep them in a sealed container in the freezer. Reheat cold or frozen cookies in the oven or microwave until warm before serving.
